Apricot Muesli Muffins
Apricot Muesli Muffins Makes 24
1 cup (150g) finely chopped dried apricots
2 teaspoons grated orange rind
1 cup orange juice
1 cup buttermilk
125g butter, melted
1/2 cup honey
2 eggs, lightly beaten
1 1/2 cups wholemeal self-raising flour
1 cup white self-raising flour
1 1/2 cups toasted muesli
1/2 cup wheatgerm
TOPPING
1/3 cup brown sugar
1/2 teaspoon cinnamon
30g butter, melted
2 tablespoons plain flour
1/2 cup toasted muesli
Combine apricots, orange rind and juice in bowl, stand 15 minetes. Stir in buttermilk, butter, honey and eggs. Combine flours, muesli and wheatgerm in bowl, make a well in centre, add apricot mixture, stir lightly until just mixed. Fill greased muffin tins three quarters full of mixture. Sprinkle with Topping, bake in moderately hot oven 20 minutes, or until golden brown.
